Spaghetti alla Carbonara
Servings: 4
Ingredients
- 1/2 cup Butter
- 1/4 pkg Bacon
- 1 pinch Red Pepper Flakes or 1 whole Pepperoncino cut up
- Black pepper freshly ground, be generous
- 2 Eggs beaten
- 1 cup Parmigiano freshly grated
- Salt
- 1 lb Spaghetti
Instructions
- Fill large pot of water and set on high heat to boil for pasta.
- Fill saucepan 2/3 full with water and bring to a boil over high heat.
- Add bacon to saucepan. Boil for 2 minutes, drain, and cut coarsely. Set aside.
- In large frying pan, melt butter over low heat.
- Add palmful of salt and pasta to large pot of boiling water.
- Add bacon to butter in saucepan before butter is completely melted. Stir to coat bacon.
- Mix pepper flakes and pepper into saucepan and leave on low heat while pasta cooks.
- When pasta is done, drain and return to pot immediately. Toss pasta well with beaten eggs.
- Pour pasta into frying pan holding bacon. Add parmigiano and toss very well.
- Serve immediately.
